Protein-Packed Family Chili

Ingredients

  • 1 lb ground beef (try Mesa Beef)
  • 2 garlic cloves diced
  • 1/4 yellow onion diced
  • 1 can Rotel diced tomatoes with green chiles drained
  • 1 can chili beans
  • 1 can black beans drained
  • 1 tbsp chili powder
  • 1 tsp ground cumin (or less if too spicy)

Instructions

  • Brown Ground beef. Set aside.
  • In cast iron or coated cast iron pot over low heat, add olive oil, onions and garlic. Cook until softened. 
  • Add browned Mesa Beef ground beef, Rotel tomatoes with chiles, chili beans, black beans. 
  • Add cumin and chili powder. Stir. 
  • Continue to heat on low until it begins to boil, stirring occasionally.

Notes

Serve with shredded cheese, sour cream.
Optional: serve over Fritos or cooled rice.
Serves 4, double for left overs.
