Cowboy Queso

Ingredients

  • 1 pound Felton Angus Beef ground beef
  • 1 tbsp Butter
  • 1/2 Onion Finely minced
  • 1 Jalapeno Seeded and diced (optional)
  • 1 tsp Chili powder
  • 1 tsp Cumin
  • 1 tsp Salt
  • 1/4 tsp Pepper
  • 1 8-oz block cream cheese
  • 1/2 cup Sour cream
  • 4 oz Green chilies 1 small can
  • 1 pound Monterey jack shredded
  • 1/2 cup Heavy cream only if needed to thin
  • OPTIONAL: Dash of your favorite hot sauce to taste
  • OPTIONAL: Garnish chopped cilantro, pico de gallo

Instructions

  • In a large skillet over medium heat, brown ground beef. Add onions, garlic and mushrooms. Cook until tender. Remove from heat. Drain ground beef if
    needed.
  • Add in butter to melt. Whisk in flour, creating a thick roux. Slowly whisk in beef stock and worcestershire sauce.
  • Add egg noodles and bring to a boil.
  • Reduce heat to simmer. Cook time according to package until al dente.
  • Stir in cream cheese and sour cream until melted and simmering.
  • Add ground beef mixture back into skillet. Salt and pepper to taste.
  • Garnish with fresh parsley and serve with a salad.

Notes

Recipe doubles easily in a dutch oven.
