Cheeseburger Soup

Ingredients

  • 1 pound Felton Angus ground beef
  • 1/2 Onion chopped
  • 1 cup Carrots chopped
  • 1 cup Celery chopped
  • 4 cup Potatoes diced
  • 4 cups Chicken Stock
  • 2 tbsp Butter
  • 1 tsp Basil
  • 1 tsp Parsley
  • 2 cups Cheddar cheese grated
  • 1 1/2 cups Half & Half or Heavy Cream
  • 1 tsp Salt
  • 1/2 tsp Pepper

Instructions

  • In dutch oven or soup pot over medium heat, brown ground beef. Remove ground beef & drain any fat.
  • Sauté onion until translucent in butter, 3-4 minutes.
  • Add chicken stock, ground beef, carrots, celery, potatoes, basil and parsley.
  • Bring to a boil. Reduce heat, cover and simmer until potatoes and carrots are tender (30-40 minutes).
  • Add cheese, milk, salt & pepper. Stir until cheese melts.
  • Serve with your choice of toppings (cheese, crackers,tortilla strips or french fries).
