
Cheeseburger Soup
Servings 4 Servings
Ingredients
- 1 pound Felton Angus ground beef
- 1/2 Onion chopped
- 1 cup Carrots chopped
- 1 cup Celery chopped
- 4 cup Potatoes diced
- 4 cups Chicken Stock
- 2 tbsp Butter
- 1 tsp Basil
- 1 tsp Parsley
- 2 cups Cheddar cheese grated
- 1 1/2 cups Half & Half or Heavy Cream
- 1 tsp Salt
- 1/2 tsp Pepper
Instructions
- In dutch oven or soup pot over medium heat, brown ground beef. Remove ground beef & drain any fat.
- Sauté onion until translucent in butter, 3-4 minutes.
- Add chicken stock, ground beef, carrots, celery, potatoes, basil and parsley.
- Bring to a boil. Reduce heat, cover and simmer until potatoes and carrots are tender (30-40 minutes).
- Add cheese, milk, salt & pepper. Stir until cheese melts.
- Serve with your choice of toppings (cheese, crackers,tortilla strips or french fries).
