Skirt Steak in Carne Asada Marinade

Felton Angus Beef skirt steak marinaded in a homemade Carne Asada marinade. Sliced thinly across the grain. As you can see the final result is juicy, tender and full of flavor. Makes amazing Carne Asada tacos and burritos. Cooked hot and fast on the @webergrills at 425 for about 8 minutes per side only flipping once.

INGREDIENTS:

1 pound outside skirt steak trimmed

Asada Marinade:
1 jalapeño seeded and minced
4 cloves garlic minced
1/2 cup chopped cilantro leaves
Juice of 1 orange
Juice of 1 lime
Juice of 1 lemon
2 tablespoons apple cider vinegar
1/3 cup olive oil
1 teaspoon ground cumin
1 teaspoon kosher salt
1/4 teaspoon fresh ground pepper

DIRECTIONS:

In a large baking dish, combine all the ingredients for the marinade and whisk together. Add skirt steak, turning to coat with marinade. Cover and refrigerate for at least 1 hour. The longer you marinade, the more tender and flavorful it will become.
Preheat grill to 425. Grill steaks for 7-10 minutes per side depending on your desired doneness.

Remove steaks and let rest 5 minutes. Slice thinly across grain and serve.
