INGREDIENTS:
Ingredients
- 2 pounds Felton Angus Beef ground beef
- 1 onion, chopped
- 1 can (14 oz) tomatoes with green chilies (Similar to Rotel)
- 1/2 cup water
- 1 can (14 oz) cream corn
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon chili powder
Topping
- 1 box corn bread mix
- 1 egg
- 1/3 cup milk
- 1 can (14 oz) cream corn
- 1 cup cheddar cheese, grated
INSTRUCTIONS:
Directions
- In a large cast iron skillet, brown beef and onion. Drain if needed.
- Add tomatoes, water, 1 can cream corn, salt, pepper and chili powder
- Simmer 15 minutes
- In a separate bowl, mix all topping ingredients
- Pour corn bread topping mix over meat mixture (or layer in baking dish if desired: meat mix first then corn bread topping)
- Bake @400 for 20-25 minutes until cornbread topping tests done.
