Oven Baked Chimichangas

Ingredients

  • 1 pound Felton Angus Beef ground beef
  • 1/4 Onion, finely chopped or 1 teaspoon dried onion
  • 1/2 tsp Chili powder
  • 1/2 tsp Cumin
  • 1/2 tsp Salt
  • 1/4 tsp Garlic powder
  • 1/4 tsp Pepper
  • 1 cup Salsa
  • 4 Burrito-sized flour tortillas
  • 1 cup Cheddar cheese shredded
  • 1 cup Monterey jack cheese shredded
  • 2 tbsp butter melted or avocado oil cooking spray
  • Toppings: Sour Cream, Salsa, Guacamole, Jalapenos, Cilantro

  • 1/2 tsp Chili powder
  • 1/2 tsp Cumin
  • 1/2 tsp Salt
  • 1/4 tsp Garlic powder
  • 1/4 tsp Pepper
  • 1 cup Salsa
  • 4 Burrito-sized flour tortillas
  • 1 cup Cheddar cheese shredded
  • 1 cup Monterey jack cheese shredded
  • 2 tbsp butter melted or avocado oil cooking spray
  • Toppings: Sour Cream, Salsa, Guacamole, Jalapenos, Cilantro

Instructions

  • In a skillet over medium heat, brown ground beef and onion. Drain fat if needed.
  • Add chili powder, cumin, salt, garlic powder, pepper (or replace with your favorite taco seasoning packet) and salsa. Simmer.
  • Preheat oven to 400 degrees, line a baking sheet with a non-stick liner, parchment paper or aluminum foil.
  • Assemble the chimichangas: Down the center of each flour tortilla add a 1⁄4 cup ground beef, sprinkle with both cheeses.
  • Roll each chimichanga: Fold the edge nearest you over the top of filling, then fold left and right sides in, then continue rolling up.
  • Place each chimichanga, fold side down on baking sheet.
  • Brush tops with melted butter or spray with avocado oil.
  • Bake at 400 for 15 minutes until golden brown.
