
Amazing Breakfast Balls
Ingredients
- 1 lb breakfast sausage
- 4 oz cream cheese
- 1 cup shredded cheddar (I’ve also used a combination of parm and cheddar)
- 3 eggs
- 1/3 cup coconut flour
- 1/2 tsp baking powder
Instructions
- Cook breakfast sausage.
- Turn heat down to low, add cream cheese in chunks and mix til evenly distributed. Set aside to cool.
- In a large mixing bowl, add eggs, shredded cheese, baking powder, and coconut flour. Beat together with a hand mixer until well mixed.
- Once sausage and cream cheese are cool (don’t put it in hot or it will start to cook the eggs) add to the egg mixture, using the hand mixer until everything is well mixed. It will be kind of soupy.
- Place mixture in fridge overnight, or, let sit for 10 minutes or more before scooping into balls. (The cooler they are the less they fall flat)
- Preheat oven 375 F
- Cover a baking sheet with bleach-free parchment paper.
- Using a 1 inch melon baller, or spoon, form 1 inch balls and place 1-2 inches apart.
- Bake for 20 minutes.
- Let cool and enjoy.
