Totchos? You love nachos! You love potato skins! It’s like the two had a baby with layers of tater tots, beef (perfect recipe for leftover shredded beef), cheese and your favorite nacho toppings for the ultimate game day food, appetizer, or easy weeknight meal with leftovers.
Make Totchos (Tater Tot Nachos) your Game Day or Taco Tuesday go-to. But be warned, this hearty recipe requires a fork for the layers of crispy tater tots, spicy beef (ground beef, shredded beef, even steak leftovers are all great choices), cheesy goodness, queso, salsa, guacamole, sour cream and jalapenos.

Totchos (Tater Tot Nachos)
Prep: 10 minutes
Cook: 30 minutes
Servings: 6
INGREDIENTS:
- 1 bag (32 ounce) frozen tater tots
- 2 cups Buffalo Shredded Beef (or 1 pound cooked ground beef, or any leftover shredded beef or sliced steak works!)
- 2 cups shredded cheese (cheddar or monterey jack)
- Favorite nacho toppings: queso cheese, sliced olives, salsa, diced tomatoes, sour cream, guacamole, buffalo sauce, hot sauce, sliced jalapenos
DIRECTIONS:
- Prepare a lined baking sheet or large cast iron skillet. Spray with cooking oil (we like avocado oil).
- Spread frozen tater tots in a single layer and bake according to directions on package until golden brown.
- While tater tots are baking, reheat shredded beef (or brown ground beef with favorite taco seasoning). Leftover steak slices work with no need to reheat prior to next step.
- Remove baked tater tots from oven, add layer of beef, top with layers of your favorite shredded cheese (option: drizzle with queso cheese).
- Return totchos to 400 degree oven. Bake for 10 minutes until cheese is melted and bubbly.
- Remove from oven and layer with your favorite nacho toppings.
- Serve for game day or weeknight meal.

Steps to Make Totchos (Tater Tot Nachos)
What do we love more than anything? An easy meal made with leftover beef! This one is sure to be a hit with you (because it’s easy and uses leftovers) and the family (because it’s delicious).
Start with a lined baking sheet or your favorite big cast iron skillet. Give it a spray of avocado oil (or cooking spray) so the tater tots don’t stick. Spread a layer of frozen tater tots and bake according to package directions.

Remove tater tots from oven and layer with reheated shredded beef leftovers. No shredded beef? Brown a pound of ground beef with your favorite taco seasoning or use leftover steak slices. No need to reheat the sliced steak.

Layer with your favorite shredded cheese. We like cheddar, Monterey jack or Colby jack. Let’s face it, our favorite is what we have on hand! Option: Drizzle on some queso cheese if you have it. Make it homemade or out of a jar.

Return layered Totchos to a 400 degree oven. Bake for 10 minutes until cheese is melted and bubbly. Remove from oven.
Top with your favorite nacho toppings: diced tomatoes, sliced olives, sour cream, guacamole, salsa, buffalo sauce, jalapenos
Serve as game day appetizer or new family favorite easy weeknight dinner.
